Risotto

  • 1 small white onion, finely chopped as close to the size of a kernel of rice (do not use a food processor, it decreases flavor)

  • 1/2 stick of unsalted butter

  • 1 cup dry white wine

  • 2 cups of our Principato di Lucedio rice

  • 1 Qt. Stock or water

  • Sea salt and pepper to taste

  • Your optional ingredients: the flavor or ingredient of your choice, such as saffron threads, Barolo wine, porcini mushrooms, gorgonzola, parmesan reggiano, cooked sausage, or any leftover meat or fish, cut in small cubes and of course a fresh robust EVOO!
