Apple Walnut Salad
6 cups chopped green leaf lettuce(butter lettuce is fun as well)
1 medium apple(any) cored and sliced
1/4 cup of sliced red onion
1/2 cup of chopped walnuts
1/2 cup of any extra virgin olive oil(we love a medium intensity here)
4 tbsp of any balsamic vinegar(we used traditional)
2 tbsp of Two Hives local honey
salt and pepper to taste
Mix olive oil, balsamic, honey in a bowl and emulsify. Add salt and pepper to taste. In a large bowl assemble your salad, apples, onions and walnuts then drizzle your vinaigrette over salad.
Optional: add a tsp of grainy Dijon mustard to vinaigrette, add crumbled blue cheese or goat cheese over salad
