Shrimp Salad

1 cup of your favorite leafy greens

1/2 pound of shrimp

1/4 cup of chopped tomatoes

1/2 sliced avocado

4 tbsp of olive oil

3 tbsp of balsamic vinegar

salt and pepper to taste

Cut and peel shrimp, then drizzle 2 tbsp in a saute pan. Cook shrimp about 2-3 minutes per side. Season with salt and pepper and put aside. 

Mix remaining olive oil and balsamic, then arrange greens, tomato, and avocado, shrimp and toss with vinaigrette. 

Makes about 2 salads
