This vinegar from Modena is a dark vinegar made according to traditional system in a determined small geographic area around Modena, as ruled by Italian law. The product is made from grape must of local varietals of grapes, which is concentrated by evaporation and caramelized. Fermentation with wine vinegar and aging according to the traditional method is carried out in wooden barrels for up to 18 years. The vinegar is a very dark, dense and syrupy liquid, with a deep brown color.
