This vinegar from Modena is a dark vinegar made according to traditional system in a determined small geographic area around Modena, as ruled by Italian law. The product is made from grape must of local varietals of grapes, which is concentrated by evaporation and caramelized. Fermentation with wine vinegar and aging according to the traditional method is carried out in wooden barrels for up to 18 years. The vinegar is a very dark, dense and syrupy liquid, with a deep brown color.

    Traditional outstanding flavor.

    Great salad recipe:
    Baby Spinach
    Candied sliced almonds
    Blue cheese crumbles
    Diced apple (I prefer organic Braeburn apples)
    Con Olio traditional balsami
    Tuscan herb olive oil

    Great Aged and Smooth Vinegar

    This is exactly what I wanted in an aged vinegar. Very smooth with a slight sweetness and depth of flavor. Will keep purchasing.
